Recipe

Jerk chicken:

5 chicken thighs boneless, cut into bite sized pieces

4 green onions, cut in 1 inch pieces

3 garlic cloves, minced

1 scotch bonnet pepper, stem removed (alternatively use a habanero)

1 inch piece of ginger, peeled and sliced

1/3 cup lime juice

1/4 cup soy sauce

2 tosp brown sugar

1 tosp fresh thyme

1 tsp all spice

1 tsp pepper

1/2 tsp ground cinnamon

1/2 tsp nutmeg


Combine chicken in a baking dish with all the other ingredients and marinate overnight or just however long you want because no one listens to that anyway. Make sure the chicken is coated well in marinade.

I cooked mine in a cast iron skillet over medium high heat or alternatively you could bake the chicken at 425 for approximately 20 minutes. It won't take as long bc of the bite size. Watch carefully.


Fried cauliflower rice:

1 cup pineapple chunks

5 slices bacon, cooked and chopped

2 tbsp vegetable oil

4 eggs beaten

1/2 cup diced red bell pepper

1/2 cup diced green bell pepper

1 cup chopped onion

1 clove garlic, minced

4 cups cauliflower rice

1/4 cup soy sauce

1 tbsp hoisin sauce

1 tosp oyster sauce

1 tsp sugar


Directions:

Add oil to skillet or wok. Add in pineapple, bell peppers, onions & garlic. Cook until soft. Move everything to one side of skillet or wok and add oil and then eggs. Scramble the eggs. Make room for cauliflower rice and add in, breaking up with a spatula. Cook for a minute and then add in remaining ingredients. Stir to incorporate ingredients.


Optional: Add chopped green onions, cilantro and yum yum sauce before serving.
